Gironde: 50 new Heiko restaurants to open by 2026

Founded in 2018 in Bordeaux (Gironde), the Heiko Poké brand specialises in healthy fast food. It currently operates 12 establishments in France and has 70 employees. To continue its development, it is focusing on expanding its franchise network and plans to open 15 new restaurants in 2025. Its ambition is to reach 50 outlets by 2026, while innovating its offerings and strengthening its eco-responsible commitments.

In 2024, the brand expanded its presence with eight new locations, including a restaurant in Dubai and two in the Parisian region. Beyond its geographical expansion, it distinguished itself through innovative products. The launch of the «Delhi» hot poké with coconut curry and the rise of white-label delivery contributed to its success.

A recipe available from April 9th for 6 months in the brand's 18 restaurants. «At Heiko, we aim to create our recipes by bringing character and a real emotional dimension.», explains its founder Ugo Truxler, who is delighted with this collaboration which «offers us the opportunity to tell a sensory journey and benefit from their expertise to develop a unique recipe.

Heiko poké announces 12 new restaurants in 2025

With a market of 200 million poké bowls consumed annually in France, the brand, created in 2018 in Bordeaux, sold over 550,000 poké bowls in 2024. It opened eight new restaurants and achieved a turnover of €9.5 million. In 2025, Heiko Poké plans to open 12 new franchise establishments and recruit 72 employees to support this growth.

Well established in Bordeaux, in the South-West (Anglet, Angoulême, La Teste de Buch, etc.) and in major cities in the west of France, the brand now intends to develop its network of franchisees in the East of France. Heiko Poké, which currently has 20 restaurants, has set itself the goal of reaching 50 outlets by 2026.

After Paris, Heiko opens a new poke bowl restaurant in the Hauts-de-Seine

Heiko is expanding. After its first restaurant opened on Rue Lafayette in Paris (9th arrondissement), the poké bowl chain has crossed the périphérique to set up in Nanterre (Hauts-de-Seine). Located just a stone's throw from the Nanterre-Université stop on the RER A, Heiko invites its guests to enjoy a break in a typical Hawaiian setting of 126 m2. 

Located at 67 Allée de Corse, this new establishment offers 54 seats for a culinary journey to Polynesia.

Twelve recipes are offered. Among these are two best-sellers: the Mahalo, a marinated salmon poké, cooked tuna cream cheese, avocado, cabbage, cucumber, all enhanced with fried onions, seeds, and a sweet chili mayo sauce, and the Copal with a lemon mayonnaise-marinated chicken, guacamole, carrots, mango, edamame, pomegranate, cashew nuts, and a lemon vinaigrette sauce...

Heiko Poké, big ambitions for 2025

In 2025, Heiko Poké is seeing life in green: the brand aims to open 12 new franchised restaurants and recruit 72 employees to support this growth. The brand, originally from the Bordeaux region and founded by Ugo Truxler, intends to develop its network of franchisees in eastern France. It is well established in Bordeaux, in the South-West (Anglet, Angoulême, La Teste-de-Buch, etc.), and in major cities in the west of the Hexagon (Caen, Angers, Nantes, Blois, Tours, etc.).

Heiko Poké has accelerated its development in recent years. The brand has been present in Paris since September 2024 in the 9th arrondissement at 76, rue Lafayette, and since November 2024 in the new district of Nanterre Université at 67, allée de Corse. With the objective of reaching 50 outlets by 2026, Heiko Poké confirms its position as the sector's number two. It is recruiting new franchisees offering them a turnkey model, designed for rapid and profitable expansion.
