Heiko Poké plans 12 more restaurants in 2025

Already the owner of 20 outlets in France, the Bordeaux-based restaurant chain Heiko Poké announces 12 new franchised restaurants in 2025 as well as the recruitment of 72 employees. The network, which claims to be the number 2 in France for poké bowls, intends to expand in particular in the East of the country. The company has already opened eight new locations in 2024. It aims for 50 points of sale by 2026. Founded in 2018, it currently employs 110 people for a turnover of 9.5 million euros in 2024.

An original culinary journey, Mohamed Cheikh reinvents the poké at Heiko

From 9th April 2025, fusion cuisine enthusiasts will be able to discover a unique creation: the Shibuya poké, the result of a collaboration between Mohamed Cheikh, winner of Top Chef 2021, and the restaurant chain Heiko. This limited offer will enrich the menu of the chain's 18 establishments for a period of six months.

Inspired by the bustling streets of Shibuya in Tokyo, this dish is a celebration of Asian flavours and textures. Mohamed Cheikh sought to transcend the traditional poké bowl by adding his personal touch.

Mohamed Cheikh signs a limited edition poké at Heiko

A recipe available from April 9th for 6 months in the brand's 18 restaurants. «At Heiko, we aim to create our recipes by bringing character and a real emotional dimension.», explains its founder Ugo Truxler, who is delighted with this collaboration which «offers us the opportunity to tell a sensory journey and benefit from their expertise to develop a unique recipe.

Bordeaux-based brand Heiko bets on a Top Chef winner

Bordeaux-based brand Heiko, which specialises in poké bowls, is teaming up with chef Mohamed Cheikh (chef at the restaurant Meïda in Saint-Ouen and winner of season 12 of Top Chef) to create a limited-edition recipe. From 9th April, and for a period of 6 months, they are launching the "Shibuya". A unique poké that promises an explosion of flavours with an assortment of salmon, wasabi coleslaw, cucumber, avocado, ginger, wasabi crunch, pomegranate and sesame seeds.

«Asian influences, powerful contrasts, an explosion of tastes and textures. It's this energy we wanted to capture in a single bite,» commented Mohamed Cheikh. Founded in 2018 in Bordeaux by Ugo Truxler, Heiko Poké, which boasts a turnover of 9.5 million euros in 2024, has 20 establishments in France, including 8 in Gironde (Bègles, La Teste de Buch, Langon, Mérignac, Pessac, Sainte-Eulalie and 2 in Bordeaux).

This collaboration showcases a bold and innovative poké, born from the meeting of the chef's culinary creativity and Heiko's fresh, modern universe. Mohamed Cheikh, known for his cuisine inspired by his travels and his blend of flavours, offers an Asian-influenced dish here, combining ultra-fresh salmon, wasabi coleslaw, crunchy cucumber, pickled ginger, melting avocado, citrus soy sauce, pomegranate, sesame seeds, and wasabi crunch for an explosion of textures and tastes. The Shibuya embodies a perfect balance of sweetness, spice, tenderness, and crunchiness. Available from 9th April 2025 for 6 months in all 18 Heiko restaurants in France and online.

Mohamed Cheikh teams up for a new poke recipe

Heiko and Mohamed Cheikh have decided to join forces to create a new limited-edition poke recipe. The chef has taken inspiration from his travels around the world to craft the Shibuya. This poke bowl is made with fresh salmon, a wasabi-infused coleslaw, crisp cucumber slivers, pickled ginger, explosive wasabi crunch, creamy avocado, the tangy zest of citrus soy sauce, a touch of pomegranate for freshness, and sesame seeds.
